Victorian Treats for your Tea Time

Since the mid 18th century, tea was intrinsically linked to femininity, and a woman at her tea things epitomised gentility and delicacy 
for many writers and painters.


 Today I'm sharing a recipe for making delicious afternoon tea at home, quickly and easily.  And thus I'm also introducing you to another cookbook I haven't mentioned yet: Cookery, rational, practical, and economical, treated in connection with the chemistry of food by Hartelaw Reid, published in London in 1855.  On page 140, I found the recipe I was talking you about.  As always, I personally test recipes I find in old cookbooks before sharing them with you, because they may need updating—sometimes some ingredients no longer exist or have been replaced by others, sometimes the weight isn't precise and requires adjustment. In this case, I'd say everything is perfect, really, and very, very simple.


 As described, I mixed 115g butter, 225g flour, 155g granulated brown sugar, and 1 egg until a dough formed;  then I added about 1-2 teaspoons of cinnamon.  Since I was short on time, I tried shaping these cookies by hand, forming small balls and flattening them with my finger in the center, rather than rolling them out and cutting them.  I brushed them with egg white, dusted them with powdered sugar, and baked them for 8 minutes at 200°C. I'm quite happy with the result ;  I got about three dozen cookies, about 4 cm in diameter.  I think the dough's consistency could be improved by letting it rest in the refrigerator overnight, which I'll try next time.


 I hope I've given you a good suggestion, maybe for when you have unexpected visitors and nothing at home ready to offer.  These are cookies that take no more than 45 minutes to make and will make you look great.

Prelibatezze vittoriane per l'ora del tè


Dalla metà del  XVIII secolo, il tè è stato intrinsecamente legato alla femminilità, e per molti scrittori e pittori l'immagine di una donna intenta a prendere il tè incarnava la gentilezza e la delicatezza.

Oggi vi propongo una ricetta per preparare in casa e molto velocemente dei deliziosi dolcetti per il te del pomeriggio.
E così vi faccio conoscere anche un'altro libro di cucina di cui ancora non vi ho parlato, il Cookery, rational, practical, and economical, treated in connection with the chemistry of food di Hartelaw Reid, pubblicato a Londra nel 1855.
A pagina 140 ho trovato la ricetta di cui vi parlavo. Come sempre provo di persona le ricette che trovo in libri di cucina vecchi prima di proporle a voi, perché magari necessitano di essere aggiornate - talvolta alcuni ingredienti non esistono più o sono stati sostituiti da altri, talvolta è il peso a non essere preciso e a richiedere aggiustamenti. In questo caso direi che sia tutto perfetto, davvero, e molto, molto semplice.


IMMAGINE 2 - LA RICETTA.


Come descritto, ho lavorato 115 g di burro, 225 g di farina, 155 g di zucchero grezzo semolato e 1 uovo fino a ottenere un impasto; poi ho aggiunto circa 1-2 cucchiaini di cannella. Avendo poco tempo a disposizione, ho provato a dare forma a questi dolcetti con le mani formando delle piccole palline e appiattendole con il dito al centro, invece di stendere una sfoglia e tagliarli. Li ho spennellati con albume d'uovo, cosparsi di zucchero a velo e cotti in forno per 8 minuti a 200 °C. Direi che il risultato mi soddisfa, ho ottenuto circa tre dozzine di biscotti di circa 4 cm di diametro. Credo che la consistenza dell'impasto potrebbe essere migliorata lasciandolo riposare in frigorifero per una notte, cosa che proverò a fare la prossima volta.

Spero di avervi fornito un buon suggerimento, magari per quando ricevete visite all'improvviso e non avete nulla da offrire. Questi sono biscotti che richiedono non più di 45 minuti per essere preparati e che vi faranno fare bella figura.

      Carissima, anche io sono "tea-addicted" da sempre, credo. Quando sono a casa non trascorro giornata senza il tè delle cinque, che sempre prendo con la mia cara mamma: è per me anche un'occasione per stare insieme e condividere con lei qualche minuto di intimità domestica, cosa che mi sembra sempre più preziosa.

      I knew that in some big city of the USA there were 'themed' hotels where you still could enjoy the Victorian atmosphere and, why not, drink your tea in vintage teacups.
      Actually you stimulated my historical curiosity, and I did a quick search online, confirming what I wrote, indeed, there are some of them spread almost all over the world. I'm going to mention you some of them: The Milestone Hotel in London, the Fantasyland Hotel in Edmonton, Alberta, The Victorian at Hotel del Coronado in California and The Victorian Mansion at Los Alamos, in California too, and The Queen Victoria in Cape May, New Jersey. These are some of the places where you can immerse yourself in 19th-century elegance by staying at authentic, historic Victorian-era rooms, dining rooms, and living rooms and also enjoying typical dishes of that age.
      That sounds like a step back in time!

I never got around to reading the book and quite enjoyed the TV series, I thought the casting of the lead actress was brilliant.

      Dearie, I haven't watched this film, as far as I know it hasn't arrived in Italy yet, but I'm going to buy the book which inspired it and bares the same title.
      The previous article I wrote was about a historical novel written in Italian, that I tryed to summarize for you in English, which is set in the Regency period, and which has Jane Austen as main character. The title of the article, which translates the title of the book, is Miss Austen's Secret.
      Maybe you like to read it.

      I'm sincerely glad to read that we do join the same interest, since I also like to measure myself with ancient recipes: maybe someone could think I'm mistaking, but I trust ancient ones more than new ones, assuming once cooking was something like an art every woman had to master.
      Alas, when recipes are too ancient, it's possible not to find some ingredients anymore, but those belonging to the Victorian age are still doable today.
